Coffee Roastery

📍Portland, Oregon

Small-batch roasting with a focus on raw, unpolished coffees and direct relationships.

Tucked into an industrial corner of Southeast Portland, Ironclad Coffee Collective operates more like a workshop than a café.

Founded by a pair of former baristas-turned-roasters, the project started with a single refurbished drum roaster and a commitment to doing things slowly—sourcing intentionally, roasting in small batches, and releasing coffees only when they’re dialed in.

There’s no hype-driven drops or overdesigned branding—just a steady rotation of coffees that reflect the people and places behind them.

About the Roaster

Light to Medium Roast (Development-Driven)

Roasting leans toward slightly longer development for body, muted but complex acidity and textural, layered cups.

Roast Style

Dark cherry • Cocoa nib • Burnt sugar • Spice

Coffees tend to feel grounded and tactile, more “record store” than “wine tasting.”

Flavor Profile

Guatemala Huehuetenango Lot
Rich and structured with cocoa, dried fruit, and spice

Ethiopia Natural Process
Jammy sweetness with subtle fermentation and chocolate undertones
